High temperatures degrade fruit traits and reduce olive oil accumulation and quality: A review

One of the main oil crops worldwide is olive (Olea europaea L.). This review discusses how high temperature stress affects olive fruit traits, and oil accumulation and quality. When warming was applied during the active olive oil accumulation stage after final fruit set, reductions in final fruit dry weight and oil percentage were prominent. Most studies showed that high temperatures reduced the duration of oil synthesis, the fruit growth phase and the fruit growth rate. Several authors reported that fatty acid profile was mostly determined by the genotype, although it also depended on fruit ontogeny and the environment, with management practices having a limited role. Studies also determined that the olive fruit presented lower oleic acid and triacylglycerol concentrations, and higher concentrations of palmitic, linoleic and linolenic acids, as well as higher total tocopherol and sterol oil concentrations, under warmer than cooler conditions. Results reported in this review could be useful in showing that the proportions of oleic and linoleic acids (in the oil accumulated during 10 to 20 weeks after flowering) are strongly influenced by thermal amplitude and especially by daily minimum temperature.
Uno de los principales cultivos proveedores de aceite en el mundo es el olivo (Olea europaea L.). Esta revisión discute como el estrés por alta temperatura afecta características del fruto de olivo, y la acumulación y calidad del aceite de oliva. Cuando el aumento de temperatura se aplicó durante la acumulación activa de aceite de oliva después del establecimiento final del fruto, se produjeron importantes reducciones en el peso seco final del fruto y en el porcentaje de aceite. La mayoría de los estudios mostraron que las altas temperaturas redujeron la duración de la síntesis de aceite, la fase de crecimiento del fruto y la tasa de crecimiento del mismo. Varios autores informaron que el perfil de ácidos grasos estuvo principalmente determinado por el genotipo, aunque también dependió de la ontogenia del fruto y del ambiente, mientas que las prácticas de manejo tuvieron un rol limitado. Los estudios también determinaron que el fruto de olivo presentó menores concentraciones de ácido oleico y de triacilglicerol, y mayores concentraciones de los ácidos palmítico, linoleico y linolénico, así como también mayores concentraciones de tocoferol total y esterol en el aceite, bajo condiciones más cálidas que más frías. Los resultados informados en esta revisión pueden ser útiles para mostrar que las proporciones de los ácidos oleico y linoleico (en el aceite acumulado durante 10 a 20 semanas después de la floración) son muy influenciadas por la amplitud térmica y especialmente por la temperatura mínima diaria.
